
My sister in law Melissa had a great idea and posted a recipe on her blog - I made this last night & it is one of my favorite recipes, so I thought I'd share! It is yummy and the meat is very tender and the best thing is that it is so easy!
Oven Baked Beef Stew
2 pounds beef stew meat
1 14.5 oz. diced tomatoes with juice
3 cups water
3 beef bouillon cubes
A few shakes of salt & pepper
1 small bag of baby carrots
4 strips of celery cut small pieces
3 potatoes, peeled & cubed
1 onion chopped
Pre-heat oven to 350 degrees. Spray 9X13 pan with non-stick spray. Brown stew meat and add salt & pepper. In the 9X13 pan add the remaining ingredients. When the meat is finished, I just pour into the pan and mix it altogether. Cover it with aluminum foil and bake for 2 hours.
This is one of my favorite recipes that I make in the fall & winter.
